Carmelized Onions and Blue Cheese in Phyllo Cups:

Ingredients:
5 - 6 large sweet onions, such as Vadallia or Walla Walla
1 - 2 Tbsp. Olive Oil
1 - 2 Tbsp. butter
Pinch of sugar Salt & Pepper
Container crumbled blue cheese
2 packages frozen pre-baked phyllo cups
Preheat oven to 350 degrees F.
Peel onions, then cut in half lengthwise and then slice again horizontally.
In a saute pan, melt olive oil and butter,
then add onions and saute over medium heat untin quite soft, about 20 minutes.
Sprinkle just enough sugar to lighty coat the onions, and add salt and pepper
to taste.
Continue to saute onions until they turn golden brown, but not too brown, another
10 minutes.
If pan becomes too dry, add a splash of white wine or more olive oil.
Let cool.
Place phyllo cups on rimmed baking sheet.
Place about 1 teas. of onion mixture in each cup,
and top each with some of the crumbled blue cheese.
Bake for about 10 15 minutes, or until cheese has melted slighty.
Serve immediately.
